Torre a Castello is located in the heart of the Crete Senesi, in that strip of land that unwinds from San Giovanni to Siena. This is where the cheese factory “La Fonte” selects the best milk offered by the Crete pastures, which contribute to making our cheese special, with all its simplicity yet representing the passion of those who believe in a genuine product, its quality and the patient labour required for a quality product without compromises.

Working process

The processing entails the pasteurisation of the milk, done with pasteuriser plates equipped with a deviating flow valve and graphical monitoring. All of our milk refrigerators, the warm rooms and the refrigerated conservation cells which hold our products fresh and those used for the ageing of our products are equipped with a computerised system that constantly monitors temperature and humidity.
